Ichundu Ceremonial Classic Matcha

This is matcha at its most considered. Ichundu sources directly from trusted farms in Shizuoka — Japan's most celebrated tea-growing region — and the Ceremonial Classic is their signature expression. Two cultivars, grown together in the same fields, shade-grown for two weeks, and harvested at first flush.

Saemidori brings the elegance: vivid emerald color, creamy umami, virtually no bitterness. Yabukita brings the backbone: a classic green tea character with just enough structure to keep things grounded. Together they're exactly what the name promises — classic.

Tasting profile

Flavor: Smooth, delicate umami with subtle natural sweetness

Aroma: Crème brûlée, crisp green apple, citrus undertones

Color: Bright verdant green

Feature callouts

Two-week shade grow

Shading concentrates L-theanine and chlorophyll, deepening the umami and that signature vivid green.

First harvest only

The year's youngest leaves, picked at their peak — softest texture, lowest bitterness, highest amino acid content.

A note on milling

The Ceremonial Classic is micro powder milled — an emerging technique now adopted by leading producers. It achieves ~95% of the particle fineness of traditional stone grinding, while yielding roughly 10x the output. The result in the cup? Virtually indistinguishable smoothness, with exceptional consistency batch to batch.

Whether you're whisking a bowl for yourself in the morning or exploring what ceremonial-grade matcha should actually taste like, this is a strong place to start — and a harder place to leave.
