Cold Smoked over applewood in Browne Trading's boutique smoker - their classic Danish trout roe elevated. 

Browne Trading has been one of America's most trusted sources for premium caviar and roe since the 1980s — supplying Michelin-starred kitchens and private chefs from their base on Portland, Maine's working waterfront. This smoked sea trout roe is a signature product: their longtime Danish trout roe, now cold smoked in-house over applewood for 15 minutes for a result that's cured and complex without ever tipping into heavy.

Taste: Sweet, lightly smoky - not too salty, with a cured finish 

Color: Translucent orange with a visible yolk 

Texture: Extra-firm pearl, satisfying pop on the palate.

The Smoking Process 

Cold smoked over ice for 15 minutes using applewood chips. The pearls stay extra-firm throughout—the smoke imparts flavor without cooking or softening the roe, preserving that signature burst and vivid translucent color.
