Kokuto (aka Japanese Sugar) from Hateruma Island 

Deep, complex, and unmistakably tied to its origin, Okinawan brown sugar is one of Japan’s most distinctive sweeteners. Produced on just a handful of islands in the Okinawan archipelago, each batch reflects its terroir—particularly the influence of coral-rich soils, which lend a unique mineral depth you won’t find in conventional sugars.

From a chef’s perspective, this is far more than a sweetener—it’s an ingredient that adds dimension. On the palate, it delivers layered notes of molasses, earth, and subtle savoriness, with an aromatic finish that hints at tobacco and warm spice. It’s the kind of sugar that doesn’t just sweeten a dish, but transforms it.

In the kitchen, its versatility is exceptional. Of course, it shines in desserts, where its richness elevates everything from custards to baked goods. But it’s equally at home in savory applications—think slow braises, broths, glazes, and sauces where a touch of depth can make all the difference. It’s also an excellent choice for sushi-zu, bringing a more nuanced sweetness and body to seasoned rice.

Because it is minimally processed, this sugar retains a natural, rustic texture rather than a uniform granulation—another reminder of its artisanal character and integrity.

Liquid Shio Koji 

Hanamaruki's Liquid Shio Koji is a unique and convenient preparation of traditional shio koji. Hanamaruki makes shio koji, places it in a sake bag and then presses it to get only the enzyme-rich liquid which they have a patent for. You can use this to marinate meats, season broths or even add to meatballs or gyoza filling...basically, if you want to add umami to anything, use Liquid Shio Koji.  That's why we call it liquid gold.

To marinate a protein, add 8 to 10% of the weight of the protein in liquid shio koji. In other words, to marinate 100 grams of meat, add 8 to 10 grams of liquid shio koji.
