Introducing Maine Garum Co.

The Maine Garum Company uses this small-batch garum to transform an ecological problem into something deeply delicious. Green Crabs are an aggressive invasive species that have damaged native shellfish populatons across the northeast. By fermenting these crabs into a traditional garum, producers are helping remove them from the ecosystem while creating a powerful, savory seasoning. The result is a clear amber liquid packed with marine umami - just a few drops can deepen sauces, vinaigrettes, seafood dishes, or roasted vegetable.
