Red or Green Kosho

Reigning from the mountainsides of Miyazaki, Japan, this fermented citrus-chili paste is a staple in serious kitchens for a reason. Kagura No Sato grows all of their own organic yuzu and Chili Peppers. Production of this Kosho uses only the yuzu skin, leaving behind the bitter pith flavor. 

Green kosho brings a sharp, grassy heat from young chilies and unripe yuzu — bright and punchy, great on fish, chicken, or a dab into a vinaigrette. Red kosho is milder and rounder, made with ripe yuzu and red chilies for a warmer citrus note and a slow, lingering spice — beautiful worked into broths, dressings, or brushed onto proteins before the grill. Both are just yuzu, chili, and salt — no shortcuts, all depth.

Landing Wednesday morning we will have what might be our last round of morels for the season and a larger sort of Chanterelles. If there is interest we will bring in a few cases of Lobster mushrooms next week, expect pricing to be similar to Chanterelle pricing.
