VACA Long Lived Striploins
We have received two pieces of the VACA long lived wagyu striploins and are offering them on a first come first served basis. We expect small monthly allotments, so we are using this as a testing ground for interest.
Vaca Long Lived Wagyu is a breeding program using cattle over 100 months old and growing them out under the "vaca Vieja" philosophy of Galician cattle growers. Expect intense complexity you get from wagyu but with a superior bite compared to an American wagyu program.
Sennari - Yuzu "Drinking" Vinegar
A triple concentrated yuzu vinegar made from yuzu from Kamikatsu in Tokushima prefecture, giving it a bright and gentle acidity. A blend of Yuzu Juice, apple cider vinegar, and honey create a perfect blend of tartness and sweetness with a fresh floral scent.
Kamikatsu, nestled in the mountains, is known for producing some of Japan's finest yuzu. The region's cool nights and warm days intensify the fruit's fragrance and flavor.
Use for sauces, seafood, fresh fruit, and mixed drinks!
They also produce an Organic Rice Wine Vinegar that we offer.
Red Boat Fish Sauce 31N
A slightly more affordable option than the classic 40N fish sauce, Red Boat's 31N "Second press" offers the flavor punch at a slightly lower price. The Nitrogen/Protein levels are still higher than 50% of the leading brands as well as uses the old world style prodcution Red Boat is famous for.

If anyone is looking to bring a game changing Branzino to the table we are offering samples of the 800-900g size of Lubina from Estero Lubimar. These fish are raised fat and hardy in estuaries, giving them excellent fat marbling and firm flesh. Bonus: estuary aquaculture like this sequesters carbon. Great fish, great story - win-win for the table and the planet.
