This week's star is one worth knowing: Rosa di Mazara prawns, sourced from the deep, cold waters off Sicily's western coast. Intensely sweet, extraordinarily clean, and built for raw applications, these are widely regarded as some of the finest prawns in the world — and with Carabinero becoming increasingly hard to source, the timing couldn't be better. We're carrying the full lineup including carpaccio, prawn elixir, freeze-dried prawn powder, and bisque. Limited availability, so reach out to reserve.
